Small Batch is a home bakery owned and operated by Breann White. Small Batch would provide artful celebration cakes to its local community using ingredients that are locally sourced by Lyon County's finest.
Small Batch's goal would be to bring justice to the art of dessert-making in a culture that has come to expect our cakes to be "watered down" by mass production and low-quality ingredients. Small Batch would look to Lyon County's finest to source its egg (Bruce Metzger, Prairie Pantry) and dairy products (Stensland Family Farms) and locally milled flours (Prarie Pantry). While many Lyon County residents rely on Sioux Falls (Hy-Vee and Wal-Mart) to provide, say, cookies for church luncheons, Small Batch's dessert service would keep money in the county and provide a much higher quality product made without artificial ingredients. While many Lyon Country residents still drive to Sioux Falls for expensive cupcakes, Small Batch would provide a more holistic product for less money and again, support the local market. Small Batch would profit from its cake, cupcake, cake truffle, old-world breakfast items and cookie sales. The Lyon County local dessert market is good since there is virtually no competition that matches Small Batch's menu and mission.
I am in the process of registering my trade name, acquiring a logo, and setting up a sole proprietor account at our local People's Bank in Lester, IA. I do need finances to buy cake boxes, cake boards, special cupcake liners and piping bags, stickers for my boxes, startup ingredients, to pay utility costs for operating out of my home, and so on. I plan to abide by Iowa's "Cottage Goods" law yet would also like to be covered under general liability insurance to protect my young family's personal assets. The financial assistance would help me to start a regular budget to pay for everything mentioned. I would like to eventually undergo a kitchen inspection an become licensed so that I could expand my menu. Paying for an inspection and license also would grant legal access to sell my product at events with local venues I am connected with (Calico Skies Vineyard and Winery, Okoboji Brewing Co.) I would need to buy a separate fridge, oven and storage space to undergo this inspection and licensing. My dream is to eventually own a store front bakery in Lyon Country, and the financial boost would eventually kick-start enough revenue to hire local employees.
